Kukis pisang
7:46 AMSepulang liburan dua minggu yang lalu, hampir tiap dua hari sekali aku baking choco chips kukis ... buat cemilan nadine ... berbagai resep dah dicoba ... dari yg hasilnya chewy ... sampek crispy ... wes semuwa ... ada satu resep yg cocok banget di lidah, dah di coba dua kali & kebetulan anakku jg suka, tapinyaa tiap kaliy bikin gak pernah selamet untuk bisa di potret ... hihihihi, kebetulan juga mood motret lagi raib entah kemana :(.
Nahh semalem ... baking kukis lagi secara kukis yg dibikin hari senin ituh dah habis .. hihihi. Kali ini korbannya kukis pisang bu martha ... resepnya dapet baca ditempat mbak vania, trus ngliat video pembuatannya di cooking friday-nya dita juga ... abis ituh kemaren mampir ke tempat mbak elsye eh ada jugah ... hihihi. Kebetulan punya pisang mateng banget dua biji ... jadi penasaran pingin nyoba. Hasilnya?? Buat penggemar kukis yg crispy gituh ... minggir dahhh :). Hasilnya emang bukan yg type crispy gituh ... apalagi setelah diinepin semalem :). Soal rasa sih enak ... apalagi buat yg doyan banana cake, pasti suka :).
Sayangnya, anakku lebih suka kukis yg crispy kriuk-kriuk ... huhuhuhu. kalo aku sih no problemo, mo crispy ayo, mo chewy or cakey ayo jugah ... pokoke enak & manis :). Resepnya aku co-pas ajah dari blog mbak vania yaa ... lagi males nge-translate ke bahasa ... :)
Banana Walnut Chocolate Chunk Cookies
Ingredients
1 cup all-purpose flour
1/2 cup whole wheat flour (me: I used all purpose flour)
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup unsalted butter, softened
1/2 cup sugar
1/2 cup packed light brown sugar
1 large egg
1 1/2 teaspoons vanilla
1/2 cup mashed banana
1 cup old fashioned oat
8 ounces semisweet chocolate, coarsely cut into chunks appx. 1/4-inch (me: I used mini chocolate chips cookies)
1/2 cup coarsely chopped walnut
Directions
1. Preheat oven to 375.
2. Combine flours, salt, and baking soda in a small bowl. Set aside.
3. Put butter & sugars into bowl of electric mixer fitted with paddle. Mix on medium speed until pale and fluffy. Reduce speed to low. Add egg and vanilla; mix until combined. Mix in banana. Add flour mixture, mix until just combined. Stir in oats, chocolate chunks, and walnuts.
4. Using 1 1/2" ice cream scoop drop dough onto baking sheets lined with parchment paper, spacing about 2" apart.
5. Bake cookies until golden brown and just set, 12-13 minutes. Cool on sheets 5 minutes & transfer to wire rack to complete cooling.
6. Can be stored in airtight containers up to 2 days if not all eaten immediately.
Btw, pe-er kbb 'dah dikerjain, 'dah sempet bikin dua kali malahh karena nadine suka ... tapi blom sempet2 motret mustiiii dah habis duluwan ... huhuhuhu. Harus bikin lagi daaah jumat ini .... hehehehe.
