Strawberry jam doughnut muffins
9:08 AMJudulnya nie sekarang musti rajin lagi nyiapin sarapan & menu sekolah buat genduknya secara sekarang khan no asisten ... jadi semuanya musti dikerjain dewe. Nahh .. sang genduk cilik-ku ini sekarang hobby request apa yg mau di bawa buat bekel besok paginya ke sekolah. Bun bikinin ini ya, bikinin itu yaa .. biasanya itu request setiap malemnya sebelum tidur .. yang banyak ya bun, nanti dibagi ama temen2 di kelas .. itu pesan sponsor tambahan ... hehehehe.
Akhirnya mulai lagiy dehh .. brosing sana-sini nyari resep2 simple yg gak makan waktu cara pembuatannya dan kira2 yg didemenin si krucils ... hehehehe. Kemaren mampir ke www.taste.com.au ... nemu banyakk banget ... yg jadi trial dicoba pertama kaliy adalah nie muffin ... judulnya "Jam doughnut muffins". Pagi tadi bikin ... cepet banget & hasilnya gak terlalu mengecewakan & manisnya pas, gak terlalu manis seperti resep2 bule yg biasanya make banyak gula (mungkin gula disana gaks emanis disini ya ... hehehehe). Yg jelas tadi pagi waktu Nadine bangun n ngliyat bekelnya ... dia kegirangan & aku dapet hadiah ciuman dari dia & "makasih ya bunnn ... i love you" :).

Jam doughnut muffins
Ingredients
2 cups self-raising flour
2/3 cup caster sugar, plus 1/2 cup extra to coat -- aku pake gula halus tadi, gak ada stok gula castor
1/3 cup vegetable oil
1 large egg
175ml buttermilk -- aku bikin dari susu uht + 1 sdt air lemon, diemin dulu lima menitan
1 tsp vanilla extract -- aku skip yang ini
3 tsp good-quality strawberry jam -- pake strawberry paletta
100g unsalted butter -- pake yg salted, adanya itu di kulkas
1 tsp ground cinnamon -- gak pake
Method
1. Preheat oven to 180°C and grease a 6-hole muffin pan.
2. Sift the flour into a medium bowl, then add a pinch of salt and the caster sugar. 3. In a jug, combine the vegetable oil, egg, buttermilk and vanilla extract. Add to the dry mixture and stir to only just combine (do not overmix).
4. Place a spoonful of the mixture in each muffin hole and make an indent in the centre. Fill each indent with a generous 1/2 teaspoon of strawberry jam. Cover the jam with the remaining muffin mixture and bake for 20 minutes. Remove from the oven and set aside to cool slightly.
5. Meanwhile, melt the butter. Combine the extra sugar and the cinnamon in a large bowl. When the muffins are cool enough to handle, brush each muffin with the melted butter, then roll in the cinnamon sugar. Serve while still a little warm.
