Gak terasa ya udah masuk tantangan KBB # 12 ... walopun aku baru ngikut 6 tantangan, tapi ngliyat badge warna-warni di sidebar sebelah kiri ituh jadinya seneng bangged :). Sukses terus buat KBB :)
Cheese Souffle - single

Kali ini tantangannya bertema savoury baking, bikin cheese souffle. Aku ini sama sekali gak tau & blom pernah makan souffle ... hehehe. Berbekal info temen2 di milis dan googling dikit, jadilah minggu kemaren bikin-nya. Anakku bilang kayak telur dadar ... hahaha. Aku sih suka ajah, apapun yg beraroma keju, aku tidak akan bisa menolak :).

Bikinnya setengah resep, jadi 4 ramekin. Dua ramekin terakhir adonannya aku tambahin parutan wortel. Manggang-nya cuma di suhu 180C, selama kurang lebih 25 menitan. Pas di oven tuh souffle membumbung tinggi, bgituh kluar, beberapa saat langsung mingpesss. Apa emang gituh yaa??. Jadi, brubung dah mingpes kemaren, akhirnya aku kluarin dari ramekin-nya trus di maem ama brokoli rebus & parutan wortel, enakk banget :).

Cara bikinnya mirip ama bikin kue sus, chayenne pepper dan mustard dijon aku skip, motretnya, sesuai saran temen2 di milis, pas si souffle masih di oven, tempat untuk motretnya dah di-setting.

Resepnya sebagei berikut ya, mungkin ada temen2 yg pingin nyoba.


Cheese souffle with broccoli & carrot

Cheese Souffles

Ingredients:
100g unsalted butter
½ cup plain (all-purpose) flour
300 ml milk
1 cup grated cheddar
2 Tbs freshly grated parmesan
½ tsp Dijon mustard
pinch cayenne pepper
4 eggs telur, separated

Directions:
1. Preheat the oven to 190C (375F, Gas Mark 5). Grease and lightly flour six ½-cup-capacity souffle dishes.
2. Melt butter in a small saucepan over low heat. Add the flour and cook, stirring constantly, for 1 minute. Gradually add the milk and whisk continuously over medium heat until the mixture is smooth, thickens and comes to the boil. Allow to cool for 5 minutes.
3. Transfer the mixture to a bowl and stir in the cheddar, parmesan, mustard and cayenne pepper. Mix well.
4. Lightly beat the egg yolks and add these to the cheese mixture. Mix well.
5. With an electric mixer, whisk the egg whites in a clean bowl until firm peaks form. Fold a quarter of the whites through the cheese mixture to slacken it slightly, then gently fold through the remaining whites.
5. Spoon the mixture into the prepared dishes and bake for 20-25 minutes, or until risen and golden. Don't be tempted to open the oven until the souffles have risen. Serve immediately.
